Sandy turned in her final project today. It rocks. I recommended that she discuss it on her journal, but in the meantime, here are some photos I took of three of her five courses: catfish ceviche served on a bed of ice; rack of lamb with preserved lemon gremolata crust; and micro greens with shallot citrus vinaigrette, garnished with sliced avocado and blood orange supremes. Yum.
